Y’all know how much I LOVE to cook and I LOVE to share what I cook with you all on this blog. I just haven’t had the time or the enthusiasm to plan meals, go grocery shopping and then spend time in the kitchen baking (what I LOVE to do the most in the kitchen), nonetheless, cook dinner.

Because of this, we’ve been ordering take out a lot more than we should and not only is that getting expensive, it usually takes forever for our order to show up.

But we are finally getting into a little bit of a groove. I’m getting back to meal planning and making it work for our lifestyle. I’m focusing on easy to prep 30 minutes (or less!!) meals, and factoring in things like frozen entrees or sandwiches, for those days when even a 30-minute meal is not doable.

In addition to meal planning easy to prepare dinners, I’ve streamlined my grocery shopping process to make things easier and more efficient with my time. Instead of grocery shopping once or twice a week like before, I now do a big shop every two to three weeks, with a quick grocery run half way through to grab milk, bread and a handful of fresh items.

Our new routine seems to be working quite well. I am becoming an even better multi tasker and while some tasks take longer now than before, I feel like for the most part I’m more organized and on top of things now, because I have to be.

Since I know many of you are in the same situation as us, busy working parents or maybe just busy working adults that don’t always have time to spend in the kitchen, I thought I would start sharing some of the quick and easy dinners I’ve been making.

Today’s recipe is not a 30-minute meal, it’s actually a 15-minute meal and a $10 dinner! This Wonton Egg Drop Soup was inspired by all those nights of take out in the first few months of parenthood. It’s a fusion of two of my favorite Asian inspired dishes, egg drop soup and wonton soup, and is not only super easy to make, it only uses a handful of ingredients.

This simple and family friendly dinner recipe uses traditional egg drop soup ingredients and then I threw in a few cups of Bibigo Mini Wontons Chicken and Vegetable that I picked up on my last grocery run to H-E-B. I’ve made Wonton Soup with homemade stuffed wontons before, but since easier, less time-consuming recipes are my motto right now, these fully cooked bite-size mini wontons where great for this soup. Since these Bibigo Mini Wontons were easy to cook with and had a nice balance of ingredients and flavors, I think in addition to soup, I could use them for other dishes like salads and simply pan frying them and serving with a dipping sauce for an easy and simple appetizer.

I love making homemade versions of our favorite restaurant dishes and this flavorful Wonton Egg Drop Soup recipe is less expensive and, dare I say it, easier than ordering take out!

Egg drop soup is traditionally a Chinese soup appetizer made from beaten eggs stirred in simmering chicken broth.

Egg Drop Soup Ingredients:

Traditionally egg drop soup is made using chicken broth and eggs and then has ginger, green onions, soy sauce, salt and pepper added to increase the flavor. To thicken the soup, a cornstarch slurry is stirred in while the broth is simmering. For this Wonton Egg Drop Soup recipe I’ve added Bibigo Mini Wontons for not only added flavor; but to make this soup heartier.

How To Make Egg Drop Soup:

Making homemade egg drop soup is easy and uses simple ingredients. You start by simmering chicken broth, fresh ginger and green onions. Next you stir in a cornstarch slurry to help thicken the soup. Then, for my Wonton Egg Drop Soup, you add the Bibigo Mini Wontons and let the soup simmer for 8-9 minutes. After the wontons are heated through, use a chopstick or fork to stir the soup while slowly drizzling in the whisked eggs.

Cooking Tip:

Use a spoon to scrape away the outer skin of the fresh ginger root. Then use a fine grater to grate the ginger into the soup.

What to serve with this Wonton Egg Drop Soup:

With the addition of the wontons to this egg drop soup recipe, this soup is hearty enough on its own to be served as a main dish paired with a simple salad. Ingredients

  • 4 cups reduced sodium chicken broth
  • 1 tablespoon cornstarch
  • 3 green onions, chopped, white and green parts separated
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon soy sauce
  • 1/4 teaspoon each kosher salt and black pepper, (white pepper is preferred, if available)
  • 2 cups Bibigo Mini Wontons Chicken and Vegetable
  • 3 large eggs

Instructions

  1. In a small bowl stir together 2 tablespoons chicken broth with the cornstarch, stirring until the cornstarch is dissolved.
  2. In a medium sized pot, stir together remaining broth, white parts of the green onions, fresh ginger, soy sauce, salt and pepper. Bring mixture to a boil.
  3. Stir in cornstarch slurry and Bibigo Mini Wontons . Reduce to a simmer and simmer for 8 minutes.
  4. Meanwhile, crack eggs in a bowl and whisk well. Using a chopstick or fork, stir soup in a circular motion and slowly pour in the beaten eggs (the eggs will spread out into ribbons).
  5. Remove from heat and serve immediately garnished with additional green onions.
