Sunday supper has become a tradition at my house. Family and friends know that on that evening at about 6:30, my table will be set and I will have a big dinner waiting. Although I want my food to be delicious, I also try to keep these meals as healthful as possible. And on top of healthful and delicious, I also strive for easy. Who wants to spend a beautiful Sunday in the kitchen?

Experts have long recommended eating fish twice a week to ensure that we get enough omega-3 fatty acids in our diet. These polyunsaturated fatty acids may have multiple benefits, including helping protect against heart disease, lowering blood sugar levels and helping improve mood. So why not start the week with a tasty fish stew? In addition to the healthful seafood, Cioppino With Fennel and Fresh Herbs has plenty of cooked tomatoes (a great source of the antioxidant lycopene), protein, potassium, iron and vitamins C and A.
