Made in a waffle iron and topped with a maple glaze, these Waffle Cookies are unique and tasty and everyone is going to love them.

That’s right, we are trying something totally different; we’re baking cookies on a waffle iron.

One might think this technique wouldn’t work, but it does. The cookies come out of the waffle iron feeling a bit soft and waffle-like. Then once they start to cool, they get a semi-firm, almost-crusty exterior which makes them more cookie-like.

Since waffles aren’t complete without maple syrup, these cookies get dipped into a maple syrup glaze for the ultimate finishing touch. This really drives home that classic waffle flavor we all love.

Ingredients

Waffle Cookies:

  • unsalted butter – I prefer using unsalted butter to control the amount of salt in my recipe. Kerrygold is my go-to brand.
  • sugar
  • kosher salt
  • cinnamon – The addition of cinnamon adds great flavor to these waffle cookies. It also works well with the maple in the glaze.
  • eggs
  • all-purpose flour

Maple Glaze:

  • confectioners’ sugar
  • pure maple syrup – Maple syrup adds to that authentic waffle flavor. Finding Home Farms is my preferred brand of maple syrup.
  • kosher salt – Kosher salt is the go-to in my kitchen.

How To Make

I’ll walk you through the steps for making waffle cookies. For your convenience, I’ve provided a full ingredient list and recipe instructions at the bottom of this post.

  1. Start by making the waffle batter in the bowl of a stand mixer. Cream together the butter and sugar until smooth. Add the salt and cinnamon. Mix to combine.
  2. Turn the mixer to medium and add the eggs one at a time until incorporated.
  3. Slowly add the flour. The batter will be sticky.
  4. Turn on your waffle iron and set the temperature at medium-high.
  5. Add about a tablespoon of dough to each section of the waffle iron.

  1. “Bake” for two to four minutes or until the cookies are golden brown.
  2. Let the cookies cool and “crisp up” on a wire rack.

  1. Mix together the glaze.
  2. Dip the top of each cookie into the glaze and return the cookies to the cooling rack to set.
  3. Pack and store your waffle cookies in an air-tight container.

Recipe Tips and Variations

  • Avoid overmixing the batter. Mix until just incorporated.
  • The cookies will be hot once baked. Use a fork or tongs to transfer them to a cooling rack.
  • These cookies are a bit time-consuming because you can only “bake” four at once (depending on the size of your waffle iron), but they bake quickly. I think the results make the time involved totally worth it.

  • Skip the glaze and just sprinkle with powdered sugar.

Instructions

  • In the bowl of a stand mixer, cream together the butter and sugar until smooth (about 4-5 minutes). Add the salt and cinnamon. Mix to combine.

  • Turn the mixer to medium and add the eggs one at a time until incorporated.

  • Set the mixer to low and slowly add the flour. The batter will be sticky.

  • Next, turn on your waffle iron and set the temperature to medium-high (400 degrees F). Add about a tablespoon of dough to each section of the waffle iron. “Bake” for 2-4 minutes or until the cookies golden brown. Let the cookies cool and crisp up on a wire rack.

  • For the glaze, whisk together the powdered sugar, maple syrup, and salt until smooth. (If the mixture seems too thick, you can thin it with a little milk.) Dip the tops of each cookie into the glaze and return them to the cooling rack to set. Pack and store your waffle cookies in an air-tight container.
