Kulfiis a popular frozen dairy dessert from the Indian subcontinent and is often described as "traditional Indian ice cream." It originated in the sixteenth century in theMughal Empire.
Mango Icecream
Coming to the recipe, This mango ice cream is super rich and creamy and with almost 0% ice crystals. Just like my aamras recipe, You can use your choice mangoes in making ice-cream too. However, I have used Alphonso mangoes here.
I have used amul fresh cream here which has 25% fat. You can use any heavy cream of your choice. Make sure to choose a cream which has minimum 25% of fat. I even tried making ice cream with whipped cream and it has a great result too.
Thishomemade mango ice creamis much much better than store bought one.When you make it at home, it has no artificial flavors or colors in it which is really a big plus. This is really rich ice cream, so two scoops per person is more than enoughif you consider yourself as a moderate eater.Otherwise you can of course have it more.

so, how to make mango ice cream recipe? step-wise photos
First make puree of the mangoes and keep aside.
Pour the cream in a bowl.Keep this bowl and whisk attachment in the freezer for 10 minutes.
Add 1 tablespoon of powdered sugar and start beating the cream.
Beat it until thickens. Be very careful that you don't over beat the cream, otherwise it will start to curdle and butter will start to separate out.
Once you get nice thick cream, add condensed milk and whisk 2 mins for mixing it properly.
now, add mango puree and mix well.
Fold it in using spatula.Do not mix vigorously otherwise cream will deflate.
Pour into the shallow and wide container, so it freezes quickly.Cover it with plastic wrap.
Make sure that plastic touches to the ice cream surface.This prevents the formation of ice crystals on top surface.
freeze it till sets properly.

Ingredients
- 500 ml chilled cream(25% to 30% fat), amul fresh cream or whipping cream or coconut cream
- 250 gm mangoes, pureed (1 to 2 large)
- ½ cup condensed milk, adjust to your taste *homemade recipe included
- 1 tablespoon powdered sugar, optional
Instructions

- I have used amul fresh cream here.
- I have used Alphonso mangoes here.
- I have used nestle condensed milk here but you can use homemade condensed milk too.
- This ice cream tastes best when consumed in a day or 2. After that ice crystals may form.

Hmmm, honey mixed with snow? In a way that sounds cool, but it also sounds like watered down honey. Haha! This mango ice cream would be so much better! We're heading into the warm days of summer here, and I know mango ice cream would be a huge hit. Pass me a spoon please! 🙂
