What is a gingerbread loaf? Starbucks made this sweet bread really popular in 2019 and people have been chatting on message boards and social media ever since it was discontinued.

It’s basically a sweet bread made with the bold spice of ginger and the caramelized sweetness of brown sugar and cinnamon.

Then, it’s all topped with a sweet vanilla glaze. It tastes so good with your favorite latte! But not only is it tough to find at Starbucks (will they bring back gingerbread loaf? We don’t know!), it’s also not a keto-friendly snack.

So, I made a low-carb version and it tastes even better than I remember the Starbucks version tasting!

There are some obvious differences between my homemade keto gingerbread loaf and the Starbucks version. But I think the best change was to the frosting.

One of my favorite things about this recipe is that it tastes just like a gingerbread sweet bread but doesn’t have molasses in it! This moist gingerbread loaf recipe will become one of your favorite holiday desserts to make and eat for breakfast.

How To Store Gingerbread Loaf

This is the perfect bread to make ahead and store in your freezer. If you want to freeze it, I suggest freezing the bread without the frosting. It will be so much easier.

This way, you just have to wrap the bread in plastic wrap, put it in a freezer bag, and keep it in the freezer for up to six months.

Place the bread on a baking tray if you want to freeze it with the frosting on. Put the baking tray in the freezer. Once the bread is completely frozen, wrap it in plastic or aluminum foil and put it in a freezer bag.

Store leftovers in an airtight container in the refrigerator for up to three days.

Preheat the oven to 350 degrees, and grease a loaf pan well. Blend together the ingredients for the bread until smooth.

Spread the batter into the prepared loaf pan, and bake for 40-45 minutes until cooked through.
