I'm just gonna come out and say this: I love salsa. Like, love love. I could probably find ways to incorporate some sort of salsa into almost any meal. Did I just hear a challenge? I think I did! 😉

I mean - a taco just isn't right unless it has some salsa on it, am I right? Or a burrito. Or a bowl.

Somehow, though, over the years, I haven't really spread the salsa loveas much as I would have liked.

What I have done is include salsa in posts with other, larger recipes (like these different, yet equally amazingsalsa verde with green chile pork tacos).

While this is handy if you just so happen to be making those recipes, it's kinda hard to find the salsa otherwise.

This is just no way to treat you. Or salsa!

IS HOMEMADE TOMATILLO SALSA VERDE HEALTHY?

This salsa verde is healthy due to the main event; Tomatillos! These green beauties have a lot going for them (Potassium and vitamin C are the stars of this fruit). They are anti-inflammatory and have antioxidants.

Tomatillos may even fight certain cancers. Other nutrients include niacin and manganese.

*It’s always best to avoid store-bought stuff. Do yourself a favor and make your own salsas whenever possible!

HOW DO I CHOOSE THE BEST TOMATILLO?

While tomatillos are a staple in Mexican groceries, you might not be super familiar with what they are and how to choose them. I'd recommend looking for a dry and papery husk on the tomatillo.

Don’t purchase them if they look damp and shriveled!

The husks covering the tomatillo should be tight and the tomatillo should feel firm to the touch.

IS TOMATILLO SALSA THE SAME AS SALSA VERDE?

Tomatillo salsa verde is the same as salsa verde, you got it! Both use the tomatillo, which is known as the Mexican husked tomato. This is the signature ingredient because tomatillos are tart and tangy, the perfect addition to a flavor-rich salsa.

*While tomatillos look a bit like a green tomato, they are very different!

HOW DO YOU MAKE HOMEMADE TOMATILLO SALSA VERDE FROM SCRATCH?

The steps to making this delicious salsa verde are pretty simple:

  1. Remove the husk from the tomatillo. They’ll be sticky, so rinse them off.
  2. Cut the tomatillos into quarters and the jalapenos into halves. Remember to remove the seeds.
  3. Slice the poblano chili in half and seed that, too. Grab the garlic cloves, leaving them unpeeled.
  4. Prep your cilantro sprigs.
  5. Place everything except the cilantro on a parchment paper-lined baking sheet. Broil 5-10 minutes.
    *I like mine a little charred.
  6. Put everything (including the cilantro, lime juice, and sea salt) in the blender. Peel the garlic first, though!
  7. Blend until smooth and enjoy!

HOW DO YOU THICKEN SALSA VERDE?

I like to prep my homemade tomatillo salsa verde recipe ahead of time. That way, I can put the cooled salsa in the fridge which thickens it up. Sometimes I add a ripe avocado to the mix.

*Doing so thickens the salsa but does change the flavor.

HOW CAN I STORE IT TO ENJOY LATER?

Store homemade tomatillo salsa verde in the fridge in an airtight container for up to 1 week. You can also freeze it. I put it in a mason jar (leave room for expansion) for up to 4 weeks. To thaw, put it in the fridge overnight.

This homemade salsa verde recipe will keep for a week. But if you’ve added avocado for thickening, the keep-time is reduced to 3 days. Keep it tightly sealed to avoid oxidation.

Ingredients

  • 10 tomatillos de-husked and quartered
  • 1 jalapeño use half for less spicy salsa, seeded and sliced in half
  • 2 garlic cloves unpeeled
  • 1 poblano chile seeded and sliced in half
  • sprig fresh cilantro stems removed
  • 2 tablespoon lime juice approx. 1 lime
  • ½ teaspoon sea salt

Instructions

  • Preheat broiler to high and line a baking sheet with aluminum foil or parchment paper.

  • Place the tomatillos, jalapeño, poblano, and unpeeled garlic cloves on the baking sheet and place into the oven to broil for 5-10 minutes, or until nicely charred.

  • Transfer everything to a blender, along with fresh cilantro leaves, lime juice, and sea salt (don’t forget to remove the peel from the garlic).

  • Blend until smooth.
